Research dinner

Last night, 7 old colleagues from KPN Research dropped by for a little reunion, catch-up and dining. I started them on a welcome drink: DeuS, a champagne beer. Beer that’s had a 2nd fermentation in the bottle just like champagne does.

Starters was a fresh home-made chicken soup with a little curry and parsley, quickly followed by a Caesar’s salad made with a bio corn-fed chicken, stir-fried, little gem salad, home-made dried tomatoes, chives and grated Parmesan cheese. The dressing was made with blended Parmesan, chives and parsley. The wine was a 2004 Chardonnay from California, to match the deep rich tones of the Parmesan cheese and dressing.

Main course was a slow-cooked veal side and then briefly baked in butter, a puree of Nicola potatoes with some chestnuts and cooked endive with sour cream and lemon juice. I poured a 2008 Cabernet Sauvignon/Merlot wine and a splendid 2009 La Pie Colette wine:  Merlot (80%) and Malbec from Domaine Mouthes Le Bihan in the Côtes de Duras.

For dessert, I made a cold Sabayon sauce and added fresh dates and Dutch strawberries and grated some dark chocolate over them.caesar salad
